Kees Raat wrote two cookbooks, show casing his inventive look on sweets. In his BONBON book, he gives you a taste of the fact that chocolate combines well with - among others - pink pepper, saffron, dried tomatoes and tabasco. And as you will see in his deli, he can also knows his way with the traditional Dutch flavours like poffertjes and stroopwafels.

The ice cream is made with organic milk from the cows living at "Ons Verlangen". You can call this Amsterdam milk, because the farm is located just north of Amsterdam. The farm is staffed with people with a mental or physical disability.
